Vie, modern American restaurant in Western Springs
Hop on a Metro train from Union Station and half an hour later you’ll be in Western Springs. It’s a cute but unremarkable suburban tiny-town, the same as any other apart from one thing: Vie. Here chef Paul Virant conjures locally-grown ingredients into finely-tuned but wholly unpretentious dishes like crispy fried quail with morel mushrooms, crème fraiche, herbs and watercress. Behind the scenes, he encourages a devoted team to experiment with homemade cheese, salami, chutneys and breads, and it pays off on the plate. Vie’s airy, almost industrial interior gives it an urban feel despite the twee setting, and at the weekends the bar buzzes with locals working their way through an interesting wine list.
