Chef Trotter, as he’s reverentially known, is the man who put Chicago on the food map. His pretty Lincoln Park restaurant has just celebrated 20 years in business, and chefs who were once his underlings have long since blazed their own trails. There are more bleeding-edge options in the city, but Charlie Trotter’s is still magical. They’ll make you feel a million dollars while plying you with a succession of small, delicious and ostensibly light courses using American ingredients and classical technique. Plastic bottles of Fiji water disguised with silver sleeves make an incongruous sight and the wine list constitutes lengthy reading; if you can, for the wine flight, which is designed to match the Grand Menu. Flawless service continues until the cab door shuts, and there’s no question that one of the priciest evenings in town is also one of the best.
