Edna’s Soul Food, Chicago

recommended by Emma Sturgess

If it’s your first time at this soul food restaurant, you get a free side order. It’s a tasty kind of welcome to a West Side institution where tourists don’t tend to dabble, but that offers a sensual feast of sorts; sweet butter melting on warm biscuits, layer cakes on the counter and low-key local chatter among the many regulars. The most important decision is whether you want your fried chicken to be light meat or dark. The latter is stickier and more flavoursome, but messier too. Those free sides might not get a look-in when the crisp, steaming chicken arrives in its perfect batter jacket, but for the record: biscuits yes, mac and cheese no.
