Noma
As reported in the final of BBC's Masterchef 2009, Noma is not only the most exciting restaurant in Scandinavia, but has been named one of the best restaurants in the world - jumping this year to third best, according to the brand-new list published in April 2009 by the Guardian. Two-Michelin-starred Noma, based in a spare, elegant 19th century warehouse far from the madding crowd on the Christianshavn side of Copenhagen's beautiful harbour, is the perfect place to start a journey of discovery of Danish food.
Although Chef Rene Redzepi has studied at the hands of international masters of molecular cuisine at The French Laundry and El Bulli, he remains passionate about homegrown ingredients sourced from all over the Danish empire, which once extended to Iceland as well as the Faroes and Greenland. Fishy treats include skate with wild beach mustard and seared mackerel with gooseberries, broad beans and hazelnuts; the approach is uncompromisingly Nordic and deeply satisfying.
